Here you got some "list". Did just take some minutes to find. For sure there are more stats to edit. I've seen that you can edit you companions stats too, but haven't touched that.
I think Weight will be difficult to mod, because I think it is calculated by some other player stat.

he is probable using the whole file you know the dd_save_00 instead of the DD_savedata that you extract from the save file

For iikid - Hey Sir this is what you need to do hence I went through the same difficulties you are having.
That `DD_SAVEDATA_00` is an actual `packed` data that actually have content within it you have to extract with a tool called `Horizon`
Just Google on `XBOX 360 Horizon`, DL that badboy, plug in your thumb drive that has your X360 profile/saves coz Horizon tool will detect that
With Horizon open nav to tab called `Tools` and click on option `Device Explorer` that should detect your thumb-drive contents with your save in it
Drill all the way down to `Dragons Dogma` folder then all the way down to your packed save called `DD_SAVEDATA_00`, while this save selected you should have
options to `Extract`, if you do that then a folder explorer dialog should popup for you to extract your granular packed save called `DD_Savedata`; it is this file specifically the one you have the Jizzabee Dragons Dogma tool have to detect and load for you to do mods with (for the luv of heavens back up your save tho).
After this your load should come up as normal and you should be able to see/edit what everyone else is doing at that point!
